Monster Cookies 2.0

Our favorite family cookie for years has been Monster Cookies; you know, the ones with the peanut butter, oats, and chocolate chips. I took the recipe we've always used, cut down & swapped out the white sugar, and axed the M&M's - heart breaking, I know, but no artificial dye in these babies!!

Another option here... these are great for peanut-free families. Though we do eat peanut butter, you can easily use any nut butter in these and they will come out great! A note about the butter (both nut butters & regular butters): this recipe calls for sea salted peanut or almond butter. If your nut butter is unsalted, add ¼ tsp sea salt to the recipe! So finally today, when the rain came in and brought some cool(er) air, it was time to break out the oven. Monster cookies




¼ cup Melted Unsalted, Grass-fed Butter, or Oil of your choice

⅔ cup Sea Salted Organic Peanut Butter, creamy

1 cup Coconut Palm Sugar 

1 Egg

2¼ cup Old Fashioned Oats

1 tsp Baking Soda

1 T Natural Vanilla Extract

1 cup dark or  semi-sweet Chocolate Chips (Enjoy Life brand)



Preheat oven to 350.

Cream both butters with sugar. 

Add egg and mix well.

Add remain ingredients, mixing to combine.

Drop by the teaspoon full onto a baking sheet. Bake for 9-10 minutes, until golden brown.
