Monster Cookies 2.0

Our favorite family cookie for years has been Monster Cookies; you know, the ones with the peanut butter, oats, and chocolate chips. I took the recipe we've always used, cut down & swapped out the white sugar, and axed the M&M's - heart breaking, I know, but no artificial dye in these babies!!

Another option here... these are great for peanut-free families. Though we do eat peanut butter, you can easily use any nut butter in these and they will come out great! A note about the butter (both nut butters & regular butters): this recipe calls for sea salted peanut or almond butter. If your nut butter is unsalted, add ¼ tsp sea salt to the recipe! So finally today, when the rain came in and brought some cool(er) air, it was time to break out the oven. Let me know what you think of these! I'm sure they won't disappoint.
